1 cup sugar
1 cup brown sugar
1 cup butter
2 tsp vanilla
2 1/2 cup flour
3/4 cup unsweetened cocoa
1 tsp soda
48 Rolo’s (unwrapped-wouldn’t want you to forget!)
Extra Ingredients for Cookie Construction~
1/2 cup chopped pecans
2-3 Tbsp sugar (I use large sugar granules-Maui Brand, from Hawaii is my favorite)
Mixing Dough Directions~
In large bowl combine 1 cup sugar 1 cup brown sugar 1 cup butter beat until light and fluffy add vanilla and eggs blend well. Lightly spoon flour into cup, add cocoa & soda to sugar mix and blend well. Roll up dough in a piece of plastic wrap and put in the fridge for 30 min.
Take a heaping tablespoon full of dough, put in hand and flatten out. Then wrap dough around a Rolo that you will put in the middle.
Dip one side (top) in sugar and then chopped pecans which are in separate bowls.
Bake 2 inches apart at 375 degree’s for about 8-10 minutes for small cookie & 10-12 minutes for larger cookie.
Let cool on cookie sheet for at least 10 minutes before removing. YUMMY!!
